Low-Point Thai Chicken


A little help for those who tell me they don't like cooking with a lot of ingredients. Easy and delicious, this thai chicken has a terrific flavor with only three ingredients. Add these ingredients to a crock pot and leave it for four to six hours (depending on how hot your crock pot gets.) Serve over rice and you will agree, this has a wonderful flavor with very little effort.

Low-Point Thai Chicken


- 5 chicken legs, remove skins
- 1, 14.5 oz. can of diced tomatoes
- 1/2 cup peanut butter (I found that Peter Pan, Whipped Creamy has the least amount of fat and calories than other peanut butters)
Place chicken legs into a crock pot. Mix diced tomatoes and peanut butter together and pour over chicken. Cook on medium-high for 6 hours and serve over rice. How easy is that? :) If you'd like a printer-friendly version of this recipe, Click Here.
