Prosciutto and Parmesan Spaghetti Squash

Talk about savory! Talk about healthy! Talk about delicious! And all in one dish! 

Ingredients:

- 1 spaghetti squash
- 2 Tbs olive oil, divided
- 1 oz. thinly sliced prosciutto
- 1/2 cup yellow onion, chopped
- 1/2 Tbs diced garlic
- 2 cups summer squash or zucchini, chopped
- 1 1/2 cup multi-colored cherry tomatoes, halved
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 tsp. white balsamic vinegar
- 1/2 cup chopped fresh parsley
- 1/4 cup grated parmesan cheese

Pierce the spaghetti squash with a knife or fork several times and place in the microwave. Cook for 5 minutes. Remove and let cool slightly. Cut spaghetti squash length-wise and, using a fork, scrape out the seeds and spaghetti. Discard seeds, and set spaghetti portion aside. 

Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add prosciutto and cook until crisp. Remove, crumble, and set aside. Add remaining 1 tablespoon olive oil to skillet along with onion and garlic. Cook for 2 minutes. Add summer squash and cook for another minute. Add tomatoes, salt, pepper, and vinegar. Cook for 2 minutes. Remove skillet from heat and add spaghetti squash, parsley, and parmesan. Divide into bowls and top with chopped prosciutto. Enjoy! Prosciutto Banana Rolls with Honey-Butter Drizzle

A very simple recipe I actually saw on The Food Network channel's, "The Iron Chef"... although they used a lot more cheese than I did. A delicious sweet and savory appetizer your family and friends will enjoy!

Ingredients: 

- 4 thin slices of prosciutto
- 1 banana, quartered
- 2 Tbs plus 2 tsp. crumbled feta cheese
- 2 Tbs butter
- 2 Tbs honey
- 2 tsp. brown sugar
- 1 tsp. corn starch

Preheat oven to 350 degrees. Cut a banana in half and then cut each half again lengthwise, creating 4 same size pieces. On a baking pan, lay out the prosciutto slices and place a banana on each slice. Sprinkle each slice with 2 tsp. of feta and roll the prosciutto around the banana. Place in the oven and bake for 15 minutes. Heat a small sauce pan over medium-high heat and add the butter, honey,  and brown sugar. Stir until butter is melted. Add the corn starch and continue heating until the sauce thickens slightly. Drizzle butter/honey sauce on the prosciutto-wrapped bananas and enjoy! Pea Pesto with Prosciutto

These bright little baguette appetizers topped with pea pesto and prosciutto make a delicious and nutritious snack for a get-together or for your own enjoyment!

Ingredients:

- 1, 8 oz. bag of frozen green peas, thawed and drained
- 1 cup packed fresh basil leaves
- 2 Tbs olive oil
- French bread baguette, cut into 1/2-inch slices and toasted (my mixture used about 18 slices)
- Part-skim ricotta cheese
- 1/2 oz. very thinly sliced prosciutto, torn or cut into pieces
- black pepper

Combine green peas, basil, and olive oil in a food processor. Pulse until the mixture becomes smooth. Place a tablespoon of pea pesto on a slice of the french bread baguette and top with a little piece of prosciutto and 1 tsp. ricotta cheese. Sprinkle with pepper and enjoy!
