Low-Point Reese's Cookies with Chocolate Drizzle

AAAA-MAZING! Incredibly delightful cookies that will completely satisfy your sweet tooth and only at only two points each, you can enjoy several to get your fill. :)

Low-Point Reese's Cookies with Chocolate Drizzle

Ingredients:

- 1/2 cup "I Can't Believe It's Not Butter", softened
- 1/3 cup Splenda
- 1/4 cup brown sugar
- 1/3 cup Peter Pan Whipped Creamy peanut butter
- 1 egg
- 1 tsp. vanilla
- 1 cup plus 2 Tbs flour
- 1/2 tsp. baking soda
- 1 Tbs Nestle Chocolate Nesquik (optional)
- 5 mini Reese's cups, chopped
- 3 1/2 oz. chocolate almond bark (2 squares from a 20 oz. package)

Preheat oven to 350 degrees. Combine butter, Splenda, brown sugar, peanut butter, egg, and vanilla in a large bowl (or mixer). In a separate bowl, whisk flour, baking soda, and Nesquik. Add flour mixture to batter a little at a time and combine thoroughly. Fold in Reese's bits. Roll cookie batter into 1" balls and place on a baking sheet. Bake for 8 minutes. Remove and let cool. While cookies are cooling, microwave almond bark according to directions on package. Place melted almond bark into a sandwich baggie and snip the corner off the baggie. Low-Point Reese's Peanut Butter Treats

.8 points! That's all you need to know. The trick is limiting yourself to just a few. This easy, kid-friendly, recipe allows you to continue relaxing while your kids make these treats for you. Make sure they put on a pot of coffee while they're at it too! :)


Low-Point Reese's Peanut Butter Treats
Ingredients:
- 1/2 cup butter (Land O Lakes Light), softened
- 1/2 cup Splenda sugar substitute
- 1/2 cup brown sugar
- 1 egg
- 3/4 cup peanut butter (reduced fat)
- 1/2 tsp. vanilla
- 1 1/4 tsp. baking powder
- 1 1/4 cup flour
- Pam cooking spray
- Reese's minis (these are new and come in an 8 oz. package already unwrapped. They're even tinier than the regular miniature Reese's)
Beat sugars and butter. Stir in egg. Add peanut butter and vanilla; mix well. Gradually add flour and baking soda and combine. Line miniature muffin tins with miniature liners. Spray liners with a little bit of cooking spray. Roll batter into little balls and drop one in the middle of each liner, pressing down slightly to fill liner. Bake at 350 degrees for 10 to 12 minutes. Remove from oven and place a mini Reese's in the center of each treat. Enjoy! If you'd like a printer-friendly version of this recipe, Click Here.

Low-Point Peanut Butter Chip Cookies

Peanut butter lovers will delight in these delicious cookies that are only 2 points each! With the perfect mixture of peanut butter and chocolate chips; there's no going wrong with these devine treats! Feel free to double the recipe for more peanut butter goodness!


Low-Point Peanut Butter Chip Cookies
Ingredients:
- 1/2 cup Skippy Whipped Peanut Butter
- 1/2 cup Splenda granulated sugar substitute
- 1/4 cup evaporated fat-free milk
- 2 tsp. cornstarch
- 1/4 cup Nestle milk chocolate chips
Preheat oven to 350 degrees. Combine peanut butter and Splenda in a mixer. Add evaporated milk, cornstarch and chocolate chips. Place little spoonfuls on an ungreased cookie sheet and bake for 10 to 12 minutes. If you'd like a printer-friendly version of this recipe, Click Here.

Low-Point No-Bake Peanut Butter Balls

Desserts! We need more desserts on this blog! 
This simple recipe for No-Bake Peanut Butter Balls is a cinch to make. However, this blog entry comes with a warning: Readers beware that it is hard to eat just one of these no-bake peanut butter balls, so in an effort to alleviate this problem I highly recommend you doubling this recipe. :)


Low-Point No-Bake Peanut Butter Balls
Ingredients:
1/4 cup reduced-fat peanut butter
2 Tbs. sugar substitute (Splenda)
2 Tbs. water
3/4 cup lightly crushed cereal (Honey Kix, Rice Krispies, Cheerios, etc.) I used Honey Kix for this recipe
1/4 cup dry milk
1/2 tsp. vanilla
1/4 cup raisins or nuts (I used chopped almonds for this recipe)
Place peanut butter, dry milk, and Splenda in a bowl. Add vanilla and water; blend well. Stir in cereal and raisins/nuts. Shape into about 12 balls. To store cookies, place in a covered container and refrigerate. For a printer-friendly version of this recipe, Click Here.
Total Servings = 12
Serving size = 1 ball
Points per serving = 1.2 points
Tip: If you use Peter Pan Whipped Creamy Peanut Butter and leave out the almonds, each ball = .5 points
Tip #2:  Roll balls in a little bit of cocoa for no added points but great-tasting flavor.
Tip #3: Add a tablespoon of mini chocolate chips to the batter before rolling into balls for your chocolate/peanut butter fix -- for virtually no extra points.
