Low-Point Reese's Cookies with Chocolate Drizzle

AAAA-MAZING! Incredibly delightful cookies that will completely satisfy your sweet tooth and only at only two points each, you can enjoy several to get your fill. :)

Low-Point Reese's Cookies with Chocolate Drizzle

Ingredients:

- 1/2 cup "I Can't Believe It's Not Butter", softened
- 1/3 cup Splenda
- 1/4 cup brown sugar
- 1/3 cup Peter Pan Whipped Creamy peanut butter
- 1 egg
- 1 tsp. vanilla
- 1 cup plus 2 Tbs flour
- 1/2 tsp. baking soda
- 1 Tbs Nestle Chocolate Nesquik (optional)
- 5 mini Reese's cups, chopped
- 3 1/2 oz. chocolate almond bark (2 squares from a 20 oz. package)

Preheat oven to 350 degrees. Combine butter, Splenda, brown sugar, peanut butter, egg, and vanilla in a large bowl (or mixer). In a separate bowl, whisk flour, baking soda, and Nesquik. Add flour mixture to batter a little at a time and combine thoroughly. Fold in Reese's bits. Roll cookie batter into 1" balls and place on a baking sheet. Bake for 8 minutes. Remove and let cool. While cookies are cooling, microwave almond bark according to directions on package. Place melted almond bark into a sandwich baggie and snip the corner off the baggie. Low-Point Breakfast Cups


So easy to make, these buttery crescent rolls filled with ham, egg, and cheese are a good way to start your day!

Low-Point Breakfast Cups

Ingredients:

- 1 tube of reduced-fat Pillsbury crescent rolls
- 5 eggs
- 1/4 cup 1% milk
- 1/2 cup reduced-fat shredded cheddar cheese
- 3 oz. ham (diced)
- your favorite seasonings to taste
- Pam baking spray with butter

Preheat oven to 375 degrees. Spray a muffin pan with Pam baking spray. Line the muffin pan with the eight crescent rolls. (You may have to break rolls apart to spread them in the muffin pan evenly.) In a large bowl, combine eggs, milk, cheese, ham and seasonings. Spoon egg mixture into each crescent roll. Bake for 13 to 15 minutes (until a toothpick comes out clean when you insert it into the egg batter.) Let cool slightly and enjoy! Low-Point Mini Turtle Brownies

Fudgy mini turtle brownies? Yes please. With some coffee too please. :) This delicious dessert doesn't need much explaining. Chocolate. Caramel. Pecans. All you need for a delightful dessert (besides the coffee of course). 

Low-Point Mini Turtle Brownies

Ingredients:

- 2 Tbs butter
- 2 Tbs milk chocolate chips
- 1 egg
- 1 egg white
- 1 cup Splenda
- 2 tsp. vanilla
- 3/4 cup flour
- 1/4 cup cocoa powder
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 2 Tbs applesauce
- Fat-free caramel syrup
- pecan pieces

Preheat oven to 350 degrees. In a small microwavable bowl, add the butter and the chips. Heat for 30 seconds. Stir and pour mixture into a larger bowl. Add egg, egg white, splenda, and vanilla. Mix until well combined. Whisk flour, cocoa powder, baking powder, and salt in a separate bowl. Gradually add flour mixture and combine thoroughly. Mix in the applesauce. Spray mini muffin pans with Pam baking spray. Spoon brownie mix into mini muffin pans (batter will be slightly sticky). Bake at 350 degrees for 7 to 8 minutes (until toothpick comes out with crumbles on it -- not completely dry). Let cool for a few minutes. With a small sharp knife, cut a small circle out of the center of each brownie, fill center with 1/2 tsp. caramel, and add 1 pecan piece in the center. Enjoy!
