Low-Point Buckeye Bars
- 1, 10 oz. package of Reese's peanut butter chips
- 7 oz. Hershey Milk Chocolate bar
- 2 Tbs chopped pecans (optional)
In a microwave-safe bowl, microwave the peanut butter chips for 40 to 60 seconds until melted and smooth. In a separate bowl, do the same with the Hershey chocolate bar. In a slightly greased small cake pan (I used a 12 inch by 7 inch cake pan, but an 8 inch by 8 inch would work as well), pour in the melted peanut butter and smooth evenly. Spread the melted chocolate on top and if desired, run the chocolate through the peanut butter to create a marbled look. Sprinkle pecans on top and refrigerate until buckeye bars are set, then cut into squares. If you need them to set quicker, place them in the freezer for 30 minutes.
