Low-Point Bagel Pizzas

The only thing better than pizza is low-point pizza!!! These very low-point delicious pizzas, made two different ways, are perfect for a light lunch or supper. Bon Appetit! 


Cheesy-Chicken Pizza
Ingredients:
- 1, Thomas Bagel Thins bagel
- 1, 4 oz. boneless, skinless, chicken breast
- 2  or 3 Tbs marinara sauce
- 2 Tbs reduced-fat shredded mozzarella cheese
- fresh basil
Preheat oven to 400 degrees. Season chicken with salt and pepper and place in shallow baking dish. Bake for 15 or 20 minutes until chicken is done. Let cool and shred or chop small. Toast bagel halves and spread one tablespoon of warmed marinara sauce on each half. Place chicken on top of marinara and add one tablespoon of cheese on top of each bagel. Parmesan Squash Pizza
Ingredients:
- 1, Thomas Bagel Thins bagel
- 4 Tbs diced tomatoes, warmed
- summer squash, shredded
- 2 tsp. grated parmesan cheese
- salt and pepper to taste
Season squash with salt and pepper and place in heated skillet. Saute' until hot. Remove from heat. Toast bagel halves and spoon 2 tablespoons of diced tomatoes on each half.
