Low-Point Fruit-Filled Empanadas

These very easy to make fruit-filled pastries are a wonderful low-point treat when you're looking for just a little something to satisfy your sweet tooth.


Low-Point Fruit-Filled Empanadas
Ingredients:
- 3 oz. fat-free cream cheese, softened
- 1/2 cup butter (I have used both Country Crock and Land O Lakes Light butter for this recipe; both having 50 calories for 1 Tbs)
- 1 cup flour
- Any flavor fruit preserves or fruit filling
- Cinnamon sugar
Cream the cheese and butter together. Mix in flour. Chill dough for 2 hours before handling. Roll dough out thinly and cut into circles using a round cookie cutter or the rim of a glass that is 3 to 3 1/2 inches round in diameter. Place circles on ungreased cookie sheet and place about 1/2 teaspoon of fruit preserves in the center. Fold over dough and press lightly. Crimp folded edge with fork. Bake 12 to 15 minutes at 375 degrees. Sprinkle lightly with cinnamon sugar and enjoy! Careful at first.. they're hot! :) If you'd like a printer-friendly version of this recipe, Click Here.
